The choice of varieties for mashed potatoes is quite extensive, your own personal preferences will determine the ultimate variety for you. Any of the varieties suggested below will make excellent mashed potato.
The safest and most common varieties for mashed potatoes are King Edward and Maris Piper. Both are easy to find online and in garden centres as seed potatoes and they are reliable to grow in the UK. They both make some of the best mashed potatoes.
Desiree and Cara are also readily available as seed potatoes and undeniably make excellent mash. Desiree has a slightly more velvety texture compared to other varieties which many find very pleasant. Cara has the additional benefit over all the above because it has very good disease resistance, blight included.

If you want a good variety which can be harvested a couple of weeks earlier than those suggested above, we would choose Kestrel. These are a second early variety which are a multi-purpose potato with great taste and few drawbacks for the UK gardener.
Many gardeners take great pride, and joy, in cultivating varieties which date back a century or more. If you are one of those gardeners and want a potato variety which dates back to 1912 and still makes very good mashed potato, go for Arran Victory. It is still widely available online and in some garden centres as seed potatoes.
